This is a wonderfully fresh dish – full of flavor and nutrients!
What You’ll Need:
3 fresh beets
1 Tablespoon olive oil
1 fennel, thinly sliced
1 -2 nectarines, thinly sliced
4 cups mixed salad greens
½ cup honey roasted sliced almonds
1 cup crumbled goat cheese (optional)
Citrus vinaigrette (recipe follows)
What to Do:
Preheat oven to 400 degrees. Then, wash and dry beets, and spear with fork. Place beets on tin foil, drizzle with olive oil and wrap each one separately in tin foil. Roast in oven for about 1 hour until tender.
Let beets cool, then peel each one and cut into slices.
Place washed salad greens in large serving bowl or platter. Then, add beets, sliced fennel, nectarines and crumbled goat cheese. Sprinkle with almonds and toss with Citrus Vinaigrette.
1 Tablespoon Dijon mustard
½ cup olive oil
2 Tablespoons honey
2 Tablespoons any citrus vinegar or juice
1 teaspoon grated purple onion
Whisk all ingredients together and toss over salad. Enjoy!
