The Easter Bunny may prefer his carrots cold and raw, but Chef Jodi’s makes carrots taste better than ever. Serve this side dish with the Cape Town Lamb entree for the perfect spring holiday dinner.
Roasted Baby Carrots
You can add parsnips and squash or any other vegetables to this. It’s so flavorful and so easy!
3 Bunches small carrots or large multi colored carrots cuts into ¼ inch strips
2 – 3 tablespoons olive oil
2 teaspoons curry
1 teaspoon cumin
Sea salt and fresh ground pepper to taste
2 Tablespoons fresh cilantro, chopped
Preheat oven to 425 degrees
In a large mixing bowl toss carrots with olive oil, curry and cumin, sea salt and pepper. Spread carrots onto a baking sheet and roast for 20 minutes. Place carrots on serving platter and sprinkle with chopped cilantro
