Festive Salad with Cranberry Vinaigrette
Be creative, use baby kale, fresh oranges whatever greens and fruit you like!
4 cups mixed salad greens
1 fennel bulb, chopped
½ cup fresh pomegranate seeds
½ cup dried cranberries
½ cup silvered roasted almonds or any roasted nut of your choice
½ cup fresh cranberries, washed and drained
1 Tablespoon white balsamic vinegar
1 Tablespoon Red Raspberry vinegar
2 Tablespoons honey
1 teaspoon fresh, minced ginger
½ cup walnut oil or olive oil
Plate salad greens, add pomegranate seeds, cranberries and nuts.
In a mini processor pulse cranberries until minced. Add vinegars, honey and ginger and pulse until well blended. Slowly add walnut or olive oil and pulse. Add salt and pepper to taste.
Drizzle vinaigrette over salad, toss and serve.
