April was sweet and full of sunshine here at Lajollacooks4u. The month was bountiful with intimate home cooking classes and, of course, exciting news we just can’t wait to share! Home Cooking’s Never Been Hotter
It isn’t even summer yet, but Lajollacooks4u is hot, hot, HOT! Guests seeking intimate cooking classes have been occupying our planners like crazy! It seems everyone wants a taste of Chef Jodi’s amazing food. Mzia, an aerospace engineer originally from Eastern Europe, spent 3 days with Chef Jodi learning the secrets of smart shopping and gourmet cooking. With a strong emphasis on ‘eating clean’, they tackled healthy Californian cuisine with a touch of ethnic flair. Together they scouted the freshest and the finest of San Diegan markets for constructing a very delicious and health conscious menu. These dishes included a mouthwatering Tabouli and Roasted Eggplant in a Yogurt Saffron Sauce. Mmmm.A delightful group of three PhD students and one emergency room doctor, stepped out of their brilliant fields for a night and into ours! Aimee, who was accompanied by her friends and boyfriend, received the special gift of Lajollacooks4u from her mother, Patty. Together they made a savory Grilled Rack of Lamb in a Mustard Herb Sauce with a ripe Avocado and Mango Salad on the side. Aimee said, “Thanks for all of the wonderful memories and tricks for making the yummiest food!” A beautiful couple from San Diego, Jesse and Rebecca, sipped wine as they cooked up a gluten-free menu with Chef Jodi. Jesse was so excited that he even brought his own knife set in a gorgeous leather casing!
The couple breezed through the preparation of their gluten free menu. Together they made Fresh Berries, Fennel, & Roasted Purple Onion atop Mixed Greens in a Parmesan Cheese Basket, a clean-eating salad featured as one of this month’s amazing new recipes! And who could forget that heavenly Chocolate Roulade they whipped up with Chef Jodi for dessert?! Mmmm, what a treat!
Jesse had great things to say about their intimate cooking class, “Jodi is AWESOME! Everything we ate was amazing and she was so accommodating to my girlfriend’s gluten intolerance. The atmosphere is second to none, and everything we ate was amazing. We will definitely be back!”
He wasn’t the only one raving about the amazing evening, Rebecca was also incredibly pleased with their evening at Lajollacooks4u , “This could not have been a more perfect experience – the view – and the conversations we had with Jodi – I sincerely loved this experience! Exceeded all of my expectations!”
Back at it in Birdrock
Birdrock resident, Patty Uribe, is still going strong in her weekly in-home cooking lessons with Chef Jodi. This month was filled with spicy Indian cuisine, pulling inspiration from all over the South Asian country.Originally from Central Asia – and now found practically everywhere, from India to the Mediterranean to Africa- is the famous samosa! Chef Jodi showed Patty how to make perfectly crisped turkey Samosas with a sweet Mango Chutney. Can’t forget this tasty Chicken Satay with homemade Peanut Sauce! So Yummy!
Chef Jodi traveled to Charlotte, North Carolina, where she visited friends and family for a few days. Even though she may venture far from the Lajollacooks4u kitchen, she always brings her vast knowledge and her love of teaching along for the ride!
