Chef Mario and the Garden-To-Table Cooking Explosion!
For Chef Jodi, there is always something new to be learned in the culinary field- new techniques, new recipes, new skills. So when the opportunity to learn from the mastermind chef behind San Francisco’s Caffe Macaroni, Macaroni Scuie Scuie, and The Purple Onion, Chef Jodi seized it.
Chef Mario Ascione arrived from San Francisco on a three-day (foodie) vacation to explore the food scene in San Diego. With Chef Jodi as a Foodie Tour Guide, the two ventured to Little Italy and the Persian market to see the best of the best of San Diego’s markets and eateries.
After the tour, the two fired up the burners and grill, and got to cooking! Chef Jodi showcased her delicious Persian Grilled Chicken Kebabs, while Chef Mario ventured to Lajollacooks4u’s garden to gather the ingredients for his summer salad recipes!
Straight from Lajollacooks4u’s garden, Chef Mario picked out fresh, organic vegetables to use as his ingredients: tomatoes, cucumber, and delicious peppers.
Chef Mario then lead the charge in creating a fabulous salad composed of those garden-fresh tomatoes, cucumbers, purple onion, olive oil, oregano and a dash of sea salt and pepper. He tossed the salad with a few ice cubes (this month’s Secret Ingredient!) to make a simple and delicious dressing out of the olive oil and oregano combination.
Next, Chef Mario charred those garden-fresh peppers, cut them into strips, and tossed them in with Kalamata olives, fresh basil, garlic, salt and olive oil for a second summer salad!
