This chicken recipe is perfect for summer grilling!
What You’ll Need:
8 boneless chicken breasts or 2 lbs. flank steak
1 Tablespoon tomato paste
1 teaspoon garlic, minced
2 Tablespoons fresh lime or lemon juice
2 teaspoons chili powder
2 teaspoons coriander
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon smoked sea salt
1/3 cup olive oil
2 Tablespoons water
What to Do:
Clean and dry chicken or meat and place in a glass Pyrex dish.
Remove seed from jalapeño and put in a small food processor. Add all remaining ingredients to food processor, process until all ingredients are completely combined and make a smooth marinade.
Pour marinade over chicken or beef, cover with plastic wrap and let marinate for several hours.
Pour over chicken and toss until all the chicken is completely coated with marinade. Marinade several hours or overnight.
Grill chicken or flank steak about 5 minutes on each side. Serve with cilantro rice or our Quinoa with Black Bean & Corn recipe!
