What You Need:
3 bunches small carrots or large multi colored carrots cuts into 1/2 inch strips
2 – 3 tablespoons olive oil
2 teaspoons cinnamon
1 teaspoon cumin
1/2 teaspoon allspice
Sea salt and fresh ground pepper, to taste
What to Do:
Preheat oven to 425 degrees.
In a large mixing bowl, toss carrots with olive oil, cinnamon, cumin, allspice, sea salt and pepper. Spread carrots onto a baking sheet and roast for 20 minutes. Place carrots on serving platter and serve. Enjoy!
