Try this delicious dish packed with veggies and flavor! Oh-so-easy to make, and healthy to boot!
What You’ll Need:
1 – 28 ounce can crushed tomatoes
1 globe eggplant, cut in small pieces
2 zucchinis, cut in small pieces
1 cup mushrooms, chopped
1 large onion, diced
1 Tablespoon fresh garlic, minced
2 Tablespoons olive oil
2 teaspoons dried rosemary
2 teaspoons dried thyme
2 teaspoons dried oregano
1 teaspoon sea salt
½ teaspoon dried red chili flakes
What to Do:
In a large sauté pan heat olive oil, add diced onion and sauté until soft. Add Eggplant, zucchini, mushrooms and garlic.
Sauté 5 minutes or so, add canned tomatoes and all seasonings. Simmer for 20 minutes until all veggies are soft. If sauce evaporates a bit add a little water.
