Grilled Zucchini & Asparagus Bundles
1 pound fresh asparagus
1 pound zucchini
1 bunch green scallions
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon fresh minced garlic
Fresh herbs – rosemary & thyme (or whatever you like)
sea salt and fresh pepper
Preheat grill or oven to 400 degrees
Wash asparagus and snap off ends. Cut zucchini into spears and trim off root of green onion.
In a small mixing bowl whisk balsamic vinegar, olive oil, garlic, fresh herbs, sea salt and pepper.
Toss marinade over vegetables and grill each side for 8 minutes or roast for 15 – 20 minutes.
