This is the easiest cookie to make in the world and you can add any dried fruit and nuts to your liking. There are so many possibilities to make this sweet treat your own!
What You’ll Need:
1/2 cup plus 3 tablespoons Dutch-process cocoa powder
3 cups confectioners’ sugar
¼ teaspoon salt
3/4 cups walnuts, roughly chopped
½ cup dried cherries
½ cup raisins
½ cup chocolate chips (optional)
4 large egg whites, at room temperature
1 tablespoon pure vanilla extract
What To Do:
Preheat the oven to 350°F.
Line two baking sheets with parchment paper and spray with oil.
In a large mixing bowl combine cocoa powder, confectioners’ sugar, salt and walnuts, dried fruit and chocolate. Whisk together or mix on low speed for 1 minute. With the mixer running, slowly add the egg whites and vanilla.
Mix on medium speed for 3 minutes, until the mixture has slightly thickened. Do not over mix it or the egg whites will thicken too much.
Refrigerate dough for about 30 minutes until it thickens.
Scoop 2-ounces of cookie dough or a generous tablespoon onto the prepared baking sheet.
Place the cookies in oven and bake for 14 to 16 minutes, or until small thin cracks appear on the surface of the cookies.
Switch the pans halfway through baking.
Pull the parchment paper with the cookies onto a wire cooling rack, and let cool completely before removing the cookies from the paper. Store in an airtight container for up to 2 days. Enjoy!
