Garlic Truffle Pomme Frites
Everyone knows that french fries are a burgers best friend…and what better way to celebrate that bond than by pairing our Lamb Burger with these super delicious GOURMET french fries?! Trust us, once you get a taste of these bad boys you’re never going to look at those frozen french fry bags again!
(If you don’t have truffle oil then simply use olive oil!)
3 pounds russet potatoes, peeled and sliced into fries or wedges
2 Tablespoons black or white truffle oil (can substitute with EVOO)
1 Tablespoons olive oil
4 cloves garlic, minced
2 Tablespoons flat leaf parsley, Chopped
2 tablespoons grated parmesan cheese (optional)
2 teaspoons coarse sea salt or kosher salt
Peel and wash potatoes and cut into long fries or wedges about 4 -6 wedges depending on size of potato. Place in large bowl, cover with cold water.
Preheat oven to 450 degrees.
In a small mixing bowl, add truffle oil, olive oil, garlic and Season with salt and pepper
Drain potatoes and dry with a paper towel, this is VERY important, the dryer your potatoes are the crispier they will be! Spray a large baking pan with olive oil, Spread potatoes out in a singe layer.
Pour olive oil mixture over potatoes and toss until well coated. Roast until brown and tender about 35 minutes, turning every 15 minutes so they do not stick to the pan.
Toss with fresh chopped parsley and Parmesan.
Keep warm until ready to serve.
