This pesto is so fresh and delicious, and enhances any fish, chicken or pasta.
What You’ll Need:
2 cups fresh dill
1 cup flat leaf parsley
2 teaspoons fresh minced garlic
¼ cup hazelnuts (or any nut of your choice such as almond, walnuts, pistachios or pine nuts)
½ teaspoon salt
¼ teaspoon ground pepper
2 Tablespoons fresh lemon juice
½ cup olive oil
What to Do:
Combine dill, parsley, garlic, nuts, salt and pepper and lemon juice in a food processor. Process until dill and parsley are chopped. Then add oil while processor is running. Transfer to bowl and enjoy!
*Can be made one day in advance. Keep refrigerated in air tight container with a thin layer of olive oil to keep pesto from darkening. Pesto can also be frozen in the same manner.
