During one of my cooking classes, one of my guests just started adding all these delicious ingredients together and it ended up being the most wonderful bruschetta I ever tasted!
What You’ll Need:
4 ripe tomatoes, chopped
1 – 2 Tablespoons olive oil
¼ cup fresh basil, chopped
1 Tablespoon roasted pine nuts
1 Tablespoon kalamata olives, chopped
1 teaspoon garlic, minced
1 teaspoon lemon juice
¼ – ½ teaspoon red chili flakes
Sea salt and fresh ground pepper, to taste
What to Do:
In a medium size bowl, add all ingredients and stir until well blended. Let sit at room temperature for an hour or so.
Serve on toasted slices of French or Italian bread and enjoy!
*This mixture can also be used on stuffed artichokes – fabulous!
